Kashmiri Pakshaili – Safar Pet Se Zannat Tak Ka
Dharti par agar kahin zannat hai to wo Kahmir me hai. Kashmir ki khoobsoorti ne kai kaviyon aur shayron ko utkirsht rachna rachne ki prerna di hai. Noon Chai – Noon Chai/Sheer Chai/Gulaabi Chai Kashmir ke sabse lokpriya aur paaramparik pey padaarthon me se ek hai. Noon Chai Kashmir ke niwaasiyon ke uttam swaad ko darshaata hai. Kashmiri Niwaasi din me 3-4 baar is chai ka sevan karte hain aur thande mausam me khud ko garm rakhte hain. Aamtaur par chai chini, chaipatti aur dhoodh ke mishran se banaya jata jai par Noon Chai ko banana me chini ki jagah namak ka upyog hota hai. Is swadishth pey padarth ko sheermal ya kulche ke saath liya jata hai aur ye lagbhag har chote-bare kashmiri dhabe pe thand ke mausam me uplabdh hota hai.

Dum Aloo – Dum Aloo bhaarat ke vibhinna hisso me tyaar kiya jaata hai par is pakshaili ka mool Kahsmir hai. Dum Aloo sadiyon se Kashmiri khaane ka ek aham hissa raha hai. Chote kachhe alloo ko dhime aanch par sunahra honey tak garm tel me talne ke baad tamatar, dhaniya, dahi, kaaju, garm masaala aur kai saare upkarano ka misran karke ek shorba taiyar kiya jata hai. Dum Aloo ka kashmiri pak-kosh me ek mahatvapurna sthaan hai. Dum Aloo ko roti, naan ya paranthe ke saath garm parosa jata hai.

Rogan Josh – Kashmiri pakwaano ki list ka zikra ho aur Rogan Josh ka naam na aaye aisa mumkin hi nahi hai. Taaze matun se bane Kshmiri Rogan Josh ka swaad saalon tak jehen ke kone kone me basa rehta hai. Is pakshaili ki khaasiyat isme upyog hone waale masaalon ka santulan aur Kahmiri vynajano ko sajaane ki khas taknik hai. Rogan Josh ek masaaledar aur bhaari mansaahari pakwaan hai jise khas maukon par tyaar kiya jata hai.
Kashmiri Kheer – Kashmir ki barfili waadiyon ke beech ghar ke andar garm kheer ki katori ek alag hi maza deti hai. Kheer khas maukaon ke saath saath har roz raat ke khaane ki thaali ki shobha badhane waaley Kashmiri pakwaano me se ek hai. Achi utkrishta ke safed chawlo ko kuch der paani me bhigone ke baad kaaju, kishmish, ilaaychi, makhaane aur kai saare aur saamagriyon ko dudh me milaakar dhimi aanch par pakaya jata hai. Kashmiri Kheer Kashmeer ke saath saath Bhaarat ke dusre hisso me bhi kaafi prachalit hai.

Sheermal – Jahan ek or duniya kashmeer ki dharti ko lekar aman aur jang ke beech vichaaron ki adla badly kar rahi hai wahin dusri taraf Sheermal, ek khas kism ki mithi kashmiri roti chai ke saath logon ko kareeb la rahi hai. Sheermal aamtaur par naaaste me khaaya jata hai. Is khas bread ko vishesh taknik ke saath tandoor me pakaya jata hai.
Kashmiri Masaale – Zindagi ko rangeen Kashmeer ke dilkash nazaare banaate hain aur khaane ko lazeez Kashmiri masaale. Kuch zyaadatar istemaal kiye jaane waaley Kashmiri masaale hain –

Kahmiri Jeevanshaili aur Sabhyata – Kashmir ke jyadatar niwaasi asal me pravaasi hain jo Turkey, Afghanistaan, Iraan aur Madhya Asia se aaye huye hain. Kashmiriyon ka roop-rang aur bhasha Indo-Aaryan dharm aur sabhyata se prabhaavit hai. Kashmiri bhasha me Punjab, Laddakh aur Dard ki jhalkiyaan milti hain. Kashmiri aabhusan me son eke saath saath vibhinna prakar ke patharon aur maniyon ka prayog hota hai. Thande vatavaran ke kaaran yahaan pure baanh ki moti kameez pehni jaati hai jo ghutne ke neeche tak lambi hoti hai aur pairo ko dhakne ke liye chaure paijaame pehne jaate hain. Kashmiri poshaak Iraan, Arab aur Turkistaan ki sabhyataon ka mishran hai.
